Carbonic maceration
For the vinification of classic red wines, the grapes are crushed in order to release the juice and promote its contact with the skin.
For carbonic maceration, intact grape berries are essential (i.e. manual harvest); once these have been placed in the vat, fermentation begins in the grape berries.
This technique gives the wine typical aromas as well as reduced acidity and low tannin extraction.
