Temperatures, a key factor for the success of wines
From harvest, the grapes must be protected from high heat to prevent uncontrolled fermentation.
During the fermentation of whites and rosés, the temperature must never exceed 20°C to avoid the appearance of undesirable aromas. For reds, it’s different: heating a vat can allow us to obtain rounder tannins and a more pleasant structure in the mouth.
Our thermo-regulated vats allow us to vary the temperature during the alcoholic fermentation, the malolactic fermentation and aging of the wines to obtain exactly what we are looking for.
